
Roasted beetroot, apple & garlic soup
Serves 2. Prep time 15 minutes, cook time 45 minutes
- 250g beetroot, skinned and cut into very small chunks
- 1 eating apple, cored and cut into quarters
- 1/2 onion, cut into quarters
- 1 clove of garlic, peeled and left whole
- 2 tbsp extra virgin olive oil
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- a pinch of ground ginger
- zest & juice of 1 lime
- 500ml chicken bone broth
- coconut cream/yoghurt – a dollop to serve
- salt & pepper
- Preheat the oven to 200c. Put the beetroot, apple, onion and garlic clove on a baking tray and drizzle with the olive oil (give it a good mix with your hands to coat). Season with salt & pepper and roast for 30-35 minutes until tender.
- Put the roasted veg and all the other ingredients except the coconut cream/yoghurt into a blender and blitz up until smooth.
- Once smooth, pour into a saucepan and simmer for 5 minutes. Serve topped with coconut yoghurt/cream.

Beetroot Cumin Crisps
Serves 2. Prep time 15 minutes Cook time 20 minutes Recipe Christine Bailey
- 2 beetroot
- 1 tbsp apple cider vinegar
- 2 tsp extra virgin olive oil
- 1 tsp ground cumin
- salt & pepper
- Preheat the oven to 180c and line a baking tray with parchment paper. Thinly slice the beetroot with a mandoline or a very sharp knife. Put the cider vinegar and olive oil into a bowl and mix together. Toss the beetroot in the vinegar mixture and leave to soak for 10 minutes.
- Spread the beetroot slices on the prepared baking sheet and season with salt & pepper and cumin. Bake for 15-20 minutes until crispy, turning them over halfway through cooking. Transfer to a wire rack to cool completely.

Beetroot hummus
- 2 cups of chickpeas (make sure you rinse them thoroughly until the water runs clear with no foam/bubbles).
- 250g cooked beetroot
- 1 clove garlic
- 1/4 cup of tahini
- juice of 1 lemon
- 1/2 tsp ground cumin
- salt to taste
- 1/4 – 1/2 cup of cold water – adjust to your preferred consistency
- Place all the ingredients (except the water) into a food processor and blitz. Add the water slowly until you reach you preferred consistency.
